RECIPE: Mexican Inspired Coriander & Lime Chicken #Blogmas2025

I love Mexican food and I love cooking it for my family however my sister Alivia doesn't so I thought I would try a more zesty chicken for her.
Serves 6
Ingredients
900g boneless and skinless chicken thighs
120ml olive oil
3 limes
5 garlic cloves
55g coriander
2 teaspoons of chilli powder
1 teaspoon of ground cumin
1 teaspoon of onion salt
Salt
Pepper
Method
Before I start, I like to marinate the chicken over night so it really does sink in.
Step 1: I have a mass amount of zip lock bags, I love marinating chicken in them so I cut majority of the chicken fat off and any other bits and put the chicken into the zip lock bag.

Step 2: I put the olive oil into a large jug, this way I can pour the marinate into the bag of chicken.

Step 3: I squeeze the limes into the olive oil as well as allowing some of the bits fall into the jug.
Step 4: I place the knife flat on the cloves individually and hit it, this crushes the garlic slightly, I peel all of the garlic and cut it into small chunks.
Step 5: I roughly cut up the coriander and add this to the jug, all of the coriander.
Step 6: I add the chilli powder, ground cumin and onion salt to the jug.

Step 7: Crack pepper and salt into the jug.

Step 8: Give the mixture a good mix.
Step 9: Pour the mixture into the bag of chicken.

Step 10: Zip up the bag and give it a good shake and then put it into the fridge to marinate. I like to give it 24 hours to marinate but you don't need that long, I have even froze it and took it out weeks later.
Step 11: I am lazy so I put the chicken in throw away tins. Put it in the oven at 200°C for 20 to 30 minutes, 10 minutes in I pull them out and baste the chicken with the liquid in the time, then after 20 minutes I take out the biggest piece and cut it to see if it is cooked inside.
Step 12: Leave the chicken to rest for 5 minutes then serve with rice, salad or tortilla wrap. This occasion I had it with a Mexican feast, more of the recipes are coming.
