REVIEW: Gousto Lighter Buffalo Chicken Salad Bowl

I love salads and love trying new salads, this box is for two people.

HOW IT COMES: It comes in a cardboard box with ice packs, all the dry products come in their very own paper bag.

INGREDIENTS:

  • 1 ciabatta roll

  • 80g natural yoghurt

  • 2 British chicken breast portions

  • 15ml Henderson's Relish

  • 150g shredded red cabbage

  • 8ml sriracha hot chilli sauce

  • 15ml white wine vinegar

  • 1 gem lettuce

  • 5g chives

  • 1/2 tsp cayenne pepper

  • 1 tsp dried oregano

  • 1/2 cucumber


INSTRUCTIONS:

STEP 1: Preheat the oven to 200°C/ 180°C (fan)/ gas 6, then take your chicken out of the fridge and open the packet to let it breathe before cooking. Rip the ciabatta into rough, bite-sized pieces, then add it to a baking tray with 1/2 tbsp of olive oil and a pinch of salt. Put the tray in the oven for 8-10 min or until golden and crispy – these are your crispy croutons.

STEP 2: Meanwhile, cut the chicken breast portions into strips. Heat a large wide-based pan (preferably non-stick) with 1/2 tbsp olive oil over a medium-high heat. Once hot add the chicken breast strips with a pinch of salt and cook for 8-10 min or until cooked through (no pink meat!).

STEP 3: Whilst the chicken is cooking, combine the sriracha, Henderson's Relish and cayenne pepper (can't handle the heat? Go easy!) in a small bowl – this is your buffalo sauce.

STEP 4: Chop the chives finely. Combine the natural yoghurt, dried oregano and half the chopped chives (save the rest to garnish!) in a small bowl. Add a pinch of salt and pepper and 1 tbsp cold water – this is your ranch dressing.

STEP 5: Cut the cucumber into quarters lengthways, then slice finely. Wash, then roughly chop the gem lettuce.

STEP 6: Once the chicken is cooked, add the buffalo sauce to the pan. Give everything a good mix up and cook for a further 2 min – this is your lighter buffalo chicken.

STEP 7: Add the chopped lettuce and sliced cucumber to a large bowl with the crispy croutons, shredded red cabbage and white wine vinegar. Add 1/2 tbsp olive oil and a pinch of salt and give it a good mix up – this is your salad. Divide the salad between your plates, and top with the lighter buffalo chicken. Drizzle the ranch dressing all over and garnish with the remaining chopped chives. Enjoy!


Loving this salad, this will definitely be a salad that I will make for my lunches at work.
