RECIPE: Mexican Inspired Street Corn Salad #Blogmas2025

I love this salad and thought I would share it with you all, now when I made this and took photos for the blog post I had done a massive Mexican feast.


Serves 4


Ingredients

For the salad

  • 4 large corn on the cobs

  • 1 red bell pepper

  • 1 jalapeños

  • 1 handful of coriander

  • 1 block of feta

For the sauce:

  • Mayonnaise

  • 2 tablespoons of sour cream

  • 2 limes

  • 1 teaspoon chilli powder

  • half a teaspoon cayenne pepper


Method



Step 1: Cook the corn on the cobs so it is soft, once it has been cooked take it out of the pot to cool down.



Step 2: Whilst the corn is cooling down I make the sauce, adding a dollop of mayonnaise and the sour cream and mix together.



Step 3: Squeeze two limes into the sauce and add the chilli powder and cayenne pepper and mix.

Step 4: The sauce is made so put it in the fridge to chill.



Step 5: Cut the corn off of the cob and then cut up the pepper into small cubes.



Step 6: Cut up the jalapeños and also the coriander.

Step 7: You can either crumble or cut up the feta and add to the mixture.



Step 8: Add the sauce and mix together, enjoy.
